I made this soup when I was feeling a little under the weather and it did wonders! This recipe takes <10 minutes to prepare and is loaded with nutrients to support immunity and lower inflammation. It’s a great option when you’re appetite is low, but you need an antioxidant superboost.

Turmeric Egg-Drop-ish Soup
1/4 white onion, finely chopped
extra virgin olive oil
broth of choice (I used chicken)
dash of tamari
handful of fresh cilantro
Sauté onions in a small pot with olive oil, salt, and turmeric.
When onions are soft and getting melty, add broth and black pepper, and bring to a boil.
Add rice noodles and let cook in the broth.
In a small bowl, whisk egg.
Once rice noodles are cooked, bring the soup to a simmer and whisk in the egg using a whisk or a fork.
Once the egg is fully cooked, turn off the heat and pour the soup into a bowl.
Add a drizzle of olive oil, tamari, and a large handful of cilantro.
