This summery chopped salad will be the perfect addition to any summer BBQ! Although, if I’m being honest, I eat this salad all year round.
A salad without lettuce is sometimes a fun way to change things up. It also stays well in the fridge as leftovers.
This salad can be jazzed up with some other fun ingredients such as:
- sweet corn
- olives
- capers
- other herbs
- some animal protein like chicken or fish to make it a full meal

Summer Chopped Salad
Ingredients:
- 4-6 persian cucumbers
- 1 red bell pepper
- 1 tomato
- 1/4 small red onion
- 1 cup fresh basil
- 1 avocado
- 3/4 can chickpeas, rinsed
- juice of 1 lemon
- extra virgin olive oil
- sea salt
- (optional) feta cheese
Directions:
- Chop up veggies into approximately 1/2-inch pieces.
- Add all ingredients to a large bowl.
- Add lemon juice, olive oil, salt, and feta. Mix well and enjoy!
