This vegan caesar salad a recipe that I’ve been making for a while, and wanted to share because I get asked all the time how to make it.
There are a few reasons why I love this recipe:
- It’s delicious
- It’s full of plant protein and healthy fats
- It’s something that you can prep the night before and bring to work for lunch (I personally think that dressed kale gets better with time, so I’ll dress the salad first and let it sit in the fridge overnight)
Vegan Caesar Salad
Ingredients:
- 1 large bunch dinosaur kale, washed and torn (I prefer this, but you can use any type of lettuce you prefer)
- 1 avocado
- 1/2 cup mixed nuts/seeds (I used sunflower, chia, and cashews)
- Vegan Caesar Dressing (see below)
Directions:
- Rinse kale/lettuce and chop (or tear) to your liking.
- Make sure kale is dried (I just pat it off with water and let it air dry for ~15 minutes).
- Toast nuts/seeds on a pan over low heat for ~5 minutes (no oil needed).
- Chop avocado.
- Massage dressing into the kale.
- Top with all other ingredients and enjoy!
Vegan Caesar Dressing
Ingredients:
- 1/2 cup hemp seeds
- 1/2 clove of garlic
- 2 Tbsp olive oil
- 1 Tbsp dijon mustard
- 1 Tbsp apple cider vinegar
- juice of 1/2 lemon
- 1/3 cup water
- salt & pepper to taste
Directions:
- Combine all ingredients in a blender.
