I’m actually extremely lazy in the kitchen, but I also (obviously) want my food to be delicious. So I’m trying to get more creative with my flavors without using 10,000 ingredients. Had some fresh basil, so decided to play around with a dairy-free, nut-free pesto.
It’s super easy to mix this with pasta & veggies, or coat on some vegetables before roasting in the oven.
NF DF Spinach Pesto Recipe:
Ingredients:
- 2/3 cup extra virgin olive oil
- 1 handful fresh basil
- 2 handfuls spinach
- 1 clove garlic
- 2 Tbsp pumpkin seeds
- salt to taste
Directions:
- Combine all ingredients in a blender.
