This is a simple recipe, it’s delish, and it’s only 5 ingredients!
Banana Oat Pancake Recipe (GF):
Ingredients:
1 mashed banana
2 eggs
1/3 cup oats
cinnamon
1 tsp coconut oil
Directions:
Combine banana, eggs, oats, and cinnamon in a bowl and mix well. (Ingredients can also be blended for a smooth consistency!)
Heat pan on medium, add coconut oil to prevent pancakes from sticking.
Scoop batter onto pan and cook for ~2 minutes (or until you’re able to move the pancake around with a spatula).
Flip pancake and cook for ~1-2 more minutes until it looks fully cooked.
Remove the pancake and repeat above until all batter is used (it’s okay to add some more coconut oil if you need to between pancakes).
Top with anything delicious (I like fresh berries and almond butter) and enjoy!
