This gluten-free granola is perfect with yogurt (or dairy-free yogurt) and fruit for breakfast, or just on its own, as a snack!
It’s so simple and full of healthy seeds for a little extra fiber.
Simple Granola Recipe (GF)
Ingredients:
- 2.5 cups gluten free oats
- 1 Tbsp melted coconut oil (olive oil also works)
- 1/3 cup maple syrup or honey
- ~1/3 cup seeds or chopped nuts of choice (I usually use a mix of flax, chia, pumpkin and/or hemp seeds)
- 2 tsp cinnamon
- sea salt
Directions:
- Set oven to 350°F.
- Spread oats on baking sheet (I use baking paper, no oil).
- Toast oats in oven until it reaches 350 degrees, then remove.
- While oats are toasting, combine coconut oil, maple syrup, nuts/seeds and cinnamon.
- Remove oats and combine with the mixture. Stir until all oats are lightly coated.
- Spread granola back on the baking sheet and put in oven for 7 minutes.
- Remove and move granola around.
- Place back in oven for 5 minutes.
- Remove and move granola around.
- Turn oven off and place granola back in oven while it’s cooling for 5 minutes.
- Remove from oven and sprinkle very lightly with sea salt.
- Let cool and enjoy!
